Ingredients
600g of mixed mushrooms
200g Butter
2 sprigs of Thyme
Salt & Pepper to taste
1 Sour Dough Baguette
100g Persian Fetta
Method
Mushrooms
Prepare the mushrooms by peeling and or slicing to the desired size.
Sour Dough
Heat a pan with 60g of the butter, slice the sour dough to correct round and the fry in the butter until golden & crisp. Remove and place on a plate. Alternatively toast under the grill until golden and toasted and butter.
To Serve
Sautee the mushrooms and thyme in the remaining butter, when cooked through place on top of the precooked bread and crumble a little of the Persian feta on top, Garnish with a sprig of thyme and serve
